I made a different polenta recipe one other time and really did not care for it. It was bland and tasteless and took a long time to cook. This version came together much quicker and most of the time was spent in the oven. I did read Sara’s notes on the side and stirred in some cheese toward the end of the cooking time because I thought my family might be more likely to eat it. And, they were. It was a nice side dish for dinner one evening.


I also saved part of the polenta and made the crispy polenta squares the next day, per Sara’s suggestion. They ate all of those too!
