Pea Vichyssoise with smoked salmon

Self-isolation continues. Day 59 for our family. We’ve been strangely busy trying to keep our kids active and off the technology as much as possible (failing at this about every fifth day). Finally finding the time to update some recipe blog posts.

I made this pea soup knowing that I would be the only one who would like eat. I cannot get anyone else in my house to eat peas, with the occasional exception of my youngest. But I like them! When I was little, my lunch often included Campbell’s pea soup made by my grandmother.

This soup is so bright in color!

Full of garden pea flavor, Sara suggests eating it chilled. Here’s the final dish.
