Warm Red Cabbage, Potato, and Kielbasa Salad with creamy mustard dressing

This recipe also featured cooked cabbage. While the borscht may not have been our favorite, this one was a winner in our house.

I love eating cooked cabbage because it always reminds me of my grandmother. She didn’t often eat the purple kind, but the smell of it cooking away always brings back fond memories. Of course when I was little I fussed about eating her cabbage, but as an adult, I enjoy it beyond just on New Year’s Day for good luck.

Kielbasa also brings back childhood memories and the mustard dressing brings this dish together. This one will be made again!
