Two recipes for one!
This vegetable soup is heavy with carrots, turnips, and parsnips. All three I have eaten before, but never together in one dish. This soup definitely has a hearty flavor. I recommend it for a cold evening.
We eat a lot of soup and, honestly, this one was not our favorite. We did eat a few bowls, but the leftovers are still in the fridge.
However, everyone loved the everything pita crisps. Super easy and reminiscent of my favorite bakery bagel, these were a fun soup topper.
If you make this soup, don’t skip over the feta cheese. The saltiness is the perfect complement to the taste of the soup. I went back and added a few more crumbles to mine!
