Slow-Roasted Rib Roast with bearnaise sauce

With the word bearnaise in the title, that’s a good indicator this recipe is a bit more high end. I had to make a modification because I was not successful finding the right cut of meat. So I looked for something comparable and what I thought my kids would like. I used all the same processes outlined in the book and ended up with a great tasting meal and I think I achieved the essence of the dish. But plan ahead – this meal took several hours to make.

Derek helped me out with the bearnaise sauce and did a great job whisking the butter in the double boiler. I think for my first attempt, this sauce turned out pretty great.

My kids loved this meal – and the sauce! This one might have to be saved for special occasions and celebrations.
