I am always looking for more fish recipes that encourage my family to broaden their taste profiles. This recipe did just that. It was easy to prepare and cooked quickly. It will go into our regular meal rotation, especially when served with the suggested refried beans.
In my opinion, the pickled onions, jalapeños, and crema is what really made this dish tasty! I probably was a little heavy-handed with the onions, but I wanted plenty of them.
