Korean Vegetable Pancakes

50 recipes! (technically 53 if you count those three speciality butters). I am trying new foods, different cooking techniques, and challenging my culinary skills. My kids talk about “the cookbook” and my husband is thrilled that I finally have a hobby other than doing research. Looking forward to completing the remaining 125 recipes!

On to vegetable pancakes. This was a great chance for me to try out my fancy new food processor attachment my Mom gave me for Christmas (thanks, Mom!).

This batter was easy to mix together. I followed the recipe that is suggested, but I loved Sara’s idea about using whatever veggies you prefer. Next time I’ll do fewer mushrooms.

These things did not need to stay in the pan for long. They cooked up easily and were tasty. The accompanying dipping sauce was a nice touch.
