Eggs are one of my favorite foods. Maybe even my number one choice. I was excited to try this Indian inspired dish.

It was very easy to put together. And it made a beautiful sauce.

I’m a sucker for anything served over rice. My husband and I both enjoyed this recipe. He even took the leftovers the next day for his lunch at work.
